Finding a suitable and unique pastime is relatively effortless. One only has to make use of the existing resources and apply the necessary processes. Cheese making, the art of making cheese at home, has come, and with today’s technology and the availability of equipment, the process easily becomes an enjoyable, simple, and even rewarding hobby.

The process of cheese making mainly requires 3 things:

▪ Milk,
▪ Basic kitchen skills together with the recipe steps, and
▪ The necessary materials and other ingredients for the process

The Milk

It is important to take note that the milk to be used in cheese making is pasteurized only, not ultra-pasteurized and certainly not homogenized. Ultra-pasteurized milk will not produce a cheese of good quality because it would be quite impossible for the curd, the starting material for the cheese, to form.

If you cannot find the required milk for cheese making, try this process: mix dry milk powder with water, with the instructions on the box carefully followed, to make one gallon of milk then add one pint whipping cream and 1/2 tsp calcium chloride. The resulting product is just as delicious and satisfying.

The milk needed can be brought from any supermarket and grocery stores but if it is not available on the store nearest you, you can start requesting the grocer to provide the appropriate milk needed in cheese making.

The Materials

Cheese making doesn’t only require the ingredients. Of course, there are also equipments to be used. For starters, books on how to make cheese at home give the essential information and recipes needed to make a good quality cheese.

Other than that, there are also certain materials and equipment that are important in the process of cheese making. These includes cheese cloth, cheese coloring, presses, sanitizers and cleaners, cheese molds, stainless stockmats, pH tester, thermometers and drying mats. There are also beginner kits available like the Basic Hard Cheese Kit.

Significantly, some ingredients are crucial in cheese making. These ingredients are acids and salts, lipase powders, rennet, bacterial starter cultures, and even mold cultures.

The uses of these ingredients in cheese making are as follows:

▪ Acids (tartaric acid and citric acid) and salts (calcium chloride and flaked cheese salt) are used to coagulate the milk and to produce the starting material of the cheese, the curd.
▪ Lipase powder imparts the necessary flavor of the cheese.
▪ The use of mesophilic, thermophilic, and other bacterial flora for starting culture is for cheese fermentation.
▪ Mold cultures like P. roqueforti, P candidum and P. shermanii serve as alternative option when choosing the needed starter culture.

The method of cheese making is relatively easy and fun. In just a single night, one can make flavorful cheeses with only the right skills and materials. Basic kitchen skills are inherent. All you need now are the materials and ingredients, which could be brought from any grocery stores.
