Mold is the Secret to Tasty Coffee?

One recent finding in studying the vast range of aromas and flavors profiles within coffee brews is that fungi may be the secret to great coffee. The research showed that it was mold that gave coffee a special range of certain aromas and flavor profiles. Every bean has their own specialized aroma and taste, but there are also natural molds within them that give a different variety to every cup grown from each specific bean. Within this certain study, there were raw coffee beans taken from coffee plantations in Brazil that were disinfected and incubated for one week to isolate the strains of mold within them. From that point, the team actually took the time to expertly roast, grind, brew, and drink from the samples where they were all charted with specific noting on their aroma, acidity, bitterness, body, astringency, sweetness.

Most of the flavors that came from the mold within the coffee beans were some that we all still love and look for within our premium coffee roasts. Flavors like citrus, floral, caramel, chocolate, and toast were among the tastes that were found within the beans that were isolated for these brews. The reason that most of this mold is occurring inside the coffee beans is due to the regions that they come from and the specific soils, climate, and humidity that they were harvested within. There is actually nothing about this fungi that can specifically harm your health, so you can rest assured as you drink your flavorful cup of Joe. Right now the researchers are actually hoping to figure out how all of this mold is metabolized within the bean so that they could potentially use this process to re-create these certain flavors to make premium coffee blends for everyone to enjoy. If this kind of good mold can actually be cultivated, then it can be used to produce a wide range of delicious tastes, similar to the multitudes of flavors found in certain wines and cheeses that use mold and yeast. This is something that is not new to the food world since these methods of producing specific flavor profiles have been used for quite some time for culinary delights.

Right now, there are certain groups of scientists all over the globe looking to find out what specific molds are contributing to this certain tastes within the coffee beans found in their own regions. Apparently, this fungi is actually something that gives a very distinctive flavor profile to each individual bean within the country that is cultivated. This really does unlock some of the mysteries as to what gives coffee it's deliciousness and robustness that we all crave. Coffee is a complex beverage that has had an incredible journey over the years, and this is just one more discovery to help us better understand our special brew in the flavors that it offers us.
